Mothers Day Menu

Whether it’s Mum, Nan, Auntie, or a dear friend, we’ve put together a cracker of a Mother’s Day menu to put a smile on their face.

Hasselback Eggplant and Hot Salami

Gamze Smoked Turkey is the hero of these fun turkey pinwheels. They’re super easy, taste amazing, and you can even make some for yourself. 

Ingredients:

  • 1 eggplant, halved
  • Gamze Hot Salami
  • 1/2 cup pizza sauce
  • 100g feta cheese
  • 1/4 cup sliced green olives
  • Fresh basil

Method:

    1. Preheat oven to 200°C and line a baking sheet with baking paper.
    2. Cut thin slices into a large eggplant, leaving the base intact.
    3. Spoon pizza sauce into each slice as well as crumbled feta and sliced olives
    4. Insert slices of hot salami into the cuts.
    5. Drizzle with olive oil and bake for 30-35 minutes until tender and crispy.

 

Eggs Royale Gamze Salmon

Eggs Royale with Salmon

Whip up these indulgent Eggs Royale with Gamze Salmon for Mum as a special treat for Mother’s Day brunch.

Ingredients:

  • 2 eggs
  • 1 tbsp white wine vinegar
  • Sourdough bread
  • Butter
  • Gamze smoked salmon
  • Chopped chives, for garnish

For the hollandaise sauce:

  • 1 tsp lemon juice
  • 1 tsp white wine vinegar
  • 2 egg yolks
  • 65g unsalted butter

Method:

  1. Prepare hollandaise sauce by whisking lemon juice, white wine vinegar, and egg yolks until frothy, then slowly adding diced butter over simmering water until thickened.
  2. Poach eggs in gently simmering water with vinegar for 4 minutes.
  3. Toast and butter English muffins, then layer with Gamze salmon, poached eggs, hollandaise sauce, and chopped chives.

 

Chorizo Croquettes

Chorizo & Potato Croquettes

They’re crispy on the outside, creamy on the inside, and loaded with our tasty chorizo.

Ingredients:

  • 2 large potatoes, peeled and cubed
  • 150g Gamze chorizo, finely diced
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • Fresh parsley, chopped 
  • 1/2 cup grated cheese (such as cheddar or mozzarella)
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying

Method:

  1. Boil potatoes until tender, then mash. Cook diced chorizo until crispy, then sauté onion and garlic until soft. Let cool.
  2. In a bowl, mix mashed potatoes, cooked chorizo, sautéed onion and garlic, grated cheese, breadcrumbs, beaten egg, parsley, salt, and pepper.
  3. Shape the mixture into croquettes.
  4. Fry croquettes in hot oil until golden brown and crispy, about 3-4 minutes.
  5. Drain on paper towels and serve hot.
